Beat the butter and powdered sugar until light and fluffy. Add the egg. Mix the flour, salt, vanilla and pistachios and add to the batter.
Pour the mixture into a piping bag and pipe onto the baking paper in curls or arches. The dough is enough for approx. 35 - 40 pieces.
Preheat the oven to 180 degrees convection and bake the pistachio curls for approx. 9-12 minutes until light. Dip half of the completely cooled cookies in melted chocolate coating and decorate with chopped pistachios.
