Place the walnuts, vanilla, salt and spices in the food processor. Blend for about 15 seconds until a semi-fine mixture is formed. Then add the dates and grated carrots and pulse in 1-second increments until a loose paste forms and the carrots are just incorporated. Caution: do not mix too much. You want a smooth dough, not a puree.
Add 2 tablespoons (18 g) of coconut flour and pulse until combined. The result should not be a paste or puree, but a soft, crumbly dough. Once the dough is well combined, add the raisins (optional) and pulse/stir again.
Roll into balls with your hands - if the balls are too sticky to roll, add a little more coconut or almond flour to dry the mixture.
Decorate with chopped walnuts (optional) and enjoy immediately or place in the fridge to chill/set.
